quick+easy diy scotchmallows

Anyone who knows me knows that my love for See’s Scotchmallows runs deep! The layer of silky caramel… the fluffy marshmallow… the creamy smooth chocolate. I mean really, what’s not to love?

Unfortunately, they aren’t the cleanest treats out there. Again, I am all for us being healthy enough to indulge in treats and not have any health repercussions from them but given how I would eat scotchmallows daily if I could, I wanted to set out to make a quick and easy healthy alternative!

For my attempt, I went with caramel and marshmallow bundle from Sweet Apricity. P.S They were nice enough to give me a code (fullymarissa)and you can score 10% off it you use it!

Before we dive into the recipe, let’s take a quick look at the ingredients!

  • SOY LECITHIN: isn’t listed as organic so it is coming from genetically modified soybeans (aka full of glyphosate), often extracted using hexane which is a solvent for glues/varnishes, a major gut-disrupting ingredient

  • VANILLIN: do not confuse this with pure vanilla extract as this is made in a lab from a variety of chemical/food additives

  • CORN SYRUP: luckily not high fructose corn syrup but still, it’s another name for sugar (which means 5 of the listed ingredients = sugar)

  • SODIUM + TRIETHYL CITRATE: solvents / forms of citric acid that are often derived from citrus mold

  • GUAR GUM: a thickener and binding agent that can cause gastrointestinal distress, loose stools, cramps, etc.

  • SULFITES: a preservative that can cause itching, hives, and other allergic reactions

Ok, done! Was that so terrible? Now you can see why I was so happy to come across the Sweet Apricity brand and find out that their products are not only clean, but super delicious as well! Which can really be hard to find in healthy sweet treats…

Now onto the recipe… which really isn’t a recipe as more of a few basic instructions!


diy scotchmallow recipe

This works with as many scotchmallows as you want to make, simply prepare more caramels / marshmallows and melt more chocolate as needed. I will use 5 as the example.

Ingredients:

  • 1/3 cup chocolate chips * I love Hu and Santa Barbara

  • 5 caramels * I use Sweet Apricity sea salt caramels fullymarissa for 10% off

  • 5 marshmallows * I use Sweet Apricity vanilla marshmallows fullymarissa for 10% off

  • Parchment paper * I use If You Care unbleached parchment

Directions:

  1. Melt down chocolate chips

  2. Unwrap and form caramels so they fit perfectly on top of the marshmallow

  3. Dip the caramel + marshmallow stack into the melted chocolate and roll around until fully coated

  4. Place on some parchment in the fridge for 20 minutes * I use If You Care because it is unbleached

  5. Remove from the fridge and enjoy!

** Store in an airtight container for up to 5 days in the fridge

** If you find your caramels are too warm and slide off the marshmallow, you can skewer each scotchmallow with a toothpick and use that to dip them into the chocolate. Once the chocolate is almost set, you can slide the toothpick out!
